Overnight Oats

So I have finally jumped on the overnight oats bandwagon, and all I can say is: Why in the world did I wait so long?!

These have quickly become a weekday staple for me (B’s sticking with the hard boiled eggs; apparently these look too healthy for him). They’re quick, easy, filling, and yummy! I throw them together on Sunday nights and just grab one as I leave for work throughout the week. It makes for a simple breakfast I can eat at my desk — a big plus compared to my usual of spooning up a messy grapefruit and peeling a smelly hard boiled egg… good thing all my coworkers like to munch at their desks, too — that keeps me full until lunch.

I have only made fruit based ones so far, but the idea of doing a tea infusion of sorts has been swirling around in my head. Hello, Chai and London Fog? Definitely going to have to experiment with that soon.


Overnight Oats

Base:

  • 1/3 cup rolled oats
  • 1/3 cup almond milk (if you use unsweetened, I would suggest adding some type of sweetener to the recipe)
  • 1 Tbsp chia seeds
  • 1/2 tsp cinnamon (optional)

Topping:

  • any handful of fruit + nuts of your choosing!
  1. In a mason jar, mix together the base ingredients. Add the toppings, and let sit overnight.
